Pea and Pesto Gnocchi
One of my weeknight go-to recipes in frequent rotation is this pea and pesto gnocchi dish. Sometimes if we have had a big meal earlier in the day, I serve it as a main, and sometimes if we are very hungry, I serve it as a side to something else. My favorite kind of gnocchi is potato gnocchi. It is very filling! I have never attempted to make it from scratch, but one of these days I will try it. To make this dish super quick and easy, take a package of store-bought gnocchi and cook it according the the package directions. Then, just toss with some cooked peas and pesto and Parmesan cheese.
Pesto is another ingredient that is better and healthier when homemade. You can add spinach or kale in addition to the fresh basil. However, if you are in a pinch for time, using store-bought pesto is quicker.
Pea and Pesto Gnocchi
Ingredients
- 1 package potato gnocchi
- 1/2 cup pesto sauce
- 1 cup cooked peas
- Parmesan cheese for topping
Instructions
- Cook the gnocchi according to package directions.
- Drain and toss the hot gnocchi with the peas and pesto, and top with Parmesan cheese.
