Pea and Pesto Gnocchi
One of my weeknight go-to recipes in frequent rotation is this pea and pesto gnocchi dish. Sometimes if we have had a big meal earlier in the day, I serve it as a main, and sometimes if we are very hungry, I serve it as a side to something else. My favorite kind of gnocchi is potato gnocchi. It is very filling! I have never attempted to make it from scratch, but one of these days I will try it. To make this dish super quick and easy, take a package of store-bought gnocchi and cook it according the the package directions. Then, just toss with some cooked peas and…

Maple Roasted Carrots
These maple roasted carrots are a simple, flavorful side that you can add to any dish. I personally love to snack on them with hummus and dukkah! These days, I love a super quick, easy, healthy, and flavorful recipe, and this one definitely makes the book. To beautify your plate, choose carrots of different colors, such as orange, purple and white. Did you know that the different colored carrots offer different health benefits? Different colored carrots also taste different from each other, giving this simple oven roasted carrot dish some variation. The purple carrots are my favorite, since they are the sweetest! Next time you are at the grocery store,…

Homemade Dukkah
Before seeing it at Trader Joes, I had never heard of dukkah before. Boy, was I missing out! I now have a glass jar full of homemade dukkah (or duqqa) on my counter stocked next to my spice rack at all times. If you aren’t familiar with dukkah, it is an Egyptian nut and spice mixed used for dipping or topping vegetables or meats. Dukkah is also great for using as crusts on meat or fish. It is crunchy and earthy in flavor. My favorite way to use dukkah is in a bowl of olive oil on the lunch or dinner table for dipping bread, and sometimes for a quick…

Roasted Rosemary Garlic Red Potatoes
These oven-baked red potatoes are soft and creamy on the inside, and crisp on the outside. They are full of delicious garlic rosemary flavor. This is one of my favorite potato recipe, hands down. It is a major comfort food for me, and when they come out of the oven I can’t stop eating them. One of the reasons I love this roasted red potato recipe is that is goes with almost any main dish. Red potatoes are high in vitamin B6, which supports a healthy nervous system, as well as potassium and fiber. Make sure to buy organic red potatoes, if you can, because they taste the best with…

Lemon Asparagus Orzo
Don’t you love that beautiful yellow color? I will tell you the secret: turmeric! Turmeric is closely related to ginger (it looks very similar on the outside), and the powder has a gorgeous, vivid yellow color. Turmeric is used commonly in Indian cooking, and is known for many health benefits (although some studies show mixed results). Health benefits include antidepressant effects, steady blood sugar levels in diabetes, anti-inflammatory effects and it even contains a compound called curcumin that may help fight viral infections. Even though there is not a lot of strong evidence for any of these benefits, I still like to sprinkle turmeric on my food whenever I can!…
