Dukkah Avocado Toast
Some days you just need something easy for lunch. The other week I shared my homemade dukkah recipe, and it tastes great on top of avocado toast! Another reason I love always having some on hand in my spice rack. I like to make these dukkah-topped avocado breads to go with a quick soup or salad for lunch, and I like the extra protein and flavors the nuts from the dukkah provide. You can purchase dukkah at some grocery stores, but it is very easy to make at home (see my recipe above).
Avocados are a superfood I always have laying around the kitchen – they are packed with vitamins, antioxidants, fiber and monounsaturated fats. They promote health blood lipid profiles, and, something else interesting, they promote the bioavailability of fat soluble vitamins in other fruits and vegetables when you eat it together. They support weight management and healthy aging.
Dukkah Avocado Toast
Ingredients
- 2 avocados, peeled and pits removed
- 4 slices bread
- 1/4 cup dukkah
Instructions
- Slice the avocados and place the slices on top of the bread slices.
- Sprinkle 1 tbsp dukkah on top of each bread.
