    Roasted Cauliflower Soup

I used to make cauliflower soup without roasting the cauliflower in the oven first, and once you have done both ways you will notice the difference the roasting makes in the flavor. Roasted cauliflower soup is so much more flavorful than just boiling the cauliflower raw. I like to add a hint of nutmeg to this soup, since it goes really well with the roasted cauliflower flavor. Did you know that cauliflower is high in vitamin C? It also has a good amount of fiber, making this soup a healthy choice! For a fancy presentation, save a few of your best looking roasted cauliflower florets to serve on top of…

Paprika Sweet Potatoes, Corn, Black Beans, Egg and Avocado

I could eat sweet potatoes every day and never get tired of them. Usually I switch the flavors around, from sweet to savory. In this oven-roasted sweet potato recipe, I use garlic powder and hot Hungarian paprika for a little kick. The black beans add a nice source of fiber, and the egg some extra protein. Avocado adds healthy fats. This is a great vegetarian dish for lunch or dinner, and goes well with any salad as a side.

    Pea and Pesto Gnocchi

One of my weeknight go-to recipes in frequent rotation is this pea and pesto gnocchi dish. Sometimes if we have had a big meal earlier in the day, I serve it as a main, and sometimes if we are very hungry, I serve it as a side to something else. My favorite kind of gnocchi is potato gnocchi. It is very filling! I have never attempted to make it from scratch, but one of these days I will try it. To make this dish super quick and easy, take a package of store-bought gnocchi and cook it according the the package directions. Then, just toss with some cooked peas and…

    Roasted Vegetable Flower Tart

The tart is a labor of love, but the end result is very satisfying! The creme fraiche is a delicious base, and squash and carrot peels are wrapped around each other to form a beautiful flower. This last time, I attempted to add some eggplant for color purposes, but I actually do not recommend adding it because it seemed to give the tart a tough texture and did not cook as softly as the other vegetables, even after 45 minutes in the oven. The purple color is beautiful, but not worth ruining the tart! Stick with easier vegetables to cook, like squash and carrots. Arranging the peels takes some time,…

    Almond Butter Oatmeal

In the past, I enjoyed cooking complicated breakfasts. It couldn’t just be plain old oatmeal or cereal, but an egg frittata with a side of whole grain pancakes and fruit. These days, it seems like the mornings are much easier when starting with a simpler breakfast. This almond butter oatmeal is one of my favorites, mostly because of the toppings – sliced apple, pecans and a drizzle of almond butter. Quick oats are easiest to use, since they cook very fast! You can use your favorite plant-based milk in place of milk or water. Oats are a healthy food because they give lasting energy and are a good source of…
