Homemade Chocolate Almond Butter Cups
Chocolate peanut butter cups were my favorite candy growing up. I always used to sneak some in mom’s basket at the grocery checkout! Fast forward many years later, I still love chocolate mixed with nut butters. I love to make my own chocolate almond butter cups at home, using either a medium or dark chocolate. There are no preservatives or artificial flavorings, just chocolate, coconut oil and almond butter! These almond butter cups are almost always in my fridge or freezer for a delicious snack!

Spinach Goat Cheese Egg Muffins
Whenever I make these egg cups, they go very quick! They are so delicious. You only need a few ingredients and a muffin pan to make them. You don’t need paper liners, because you can just grease the muffin pan itself with butter, olive oil or cooking spray. These spinach and goat cheese egg muffins are great for breakfast, brunch or having some in the refrigerator for a quick snack. This breakfast recipe is even easy for my toddler to make. These black bean enchiladas are one of my favorite vegetarian dishes. You won’t miss the meat at all, and they are very filling and tasty with all of the toppings you can add. I love to serve these with sour cream, guacamole, cilantro, and salsa. Some days you just need something easy for lunch. The other week I shared my homemade dukkah recipe, and it tastes great on top of avocado toast!
