    Red Lentil Soup with Spinach

This red lentil soup is one of my favorite soup recipes! There are so many flavors going on in this soup, and it is really healthy. Lentils are high in protein, making them a great meat substitute in a plant based diet. They are also a good source of fiber, iron and calcium. Red lentils cook the fastest, which is one of the reasons I prefer using them in recipes. One other thing I love about lentils is that they keep you feeling full for a long time, and give you lasting energy. Flavors inside this comforting soup include garlic, cilantro, curry, and coriander. Carrots and tomatoes also give it…

    Homemade Almond Milk

One of the staples of a plant-based diet is enjoying nut milks instead of animal milks. I love homemade almond milk or cashew milk in my cereal or oatmeal in the mornings! Nut milks are very easy to make at home, and there is no need to buy expensive milks at the grocery store. Many times the nut milks you find at the store contain preservatives, “natural flavors” and are processed in other ways we don’t want. There is really no excuse. If you have a blender and a coffee filter at home, you can do it! Most of the time it takes to make nut milks is waiting for…

    Maple Roasted Carrots

These maple roasted carrots are a simple, flavorful side that you can add to any dish. I personally love to snack on them with hummus and dukkah! These days, I love a super quick, easy, healthy, and flavorful recipe, and this one definitely makes the book. To beautify your plate, choose carrots of different colors, such as orange, purple and white. Did you know that the different colored carrots offer different health benefits? Different colored carrots also taste different from each other, giving this simple oven roasted carrot dish some variation. The purple carrots are my favorite, since they are the sweetest! Next time you are at the grocery store,…

    BBQ Jackfruit Sandwiches

I only discovered jackfruit just recently while browsing the tofu section of my grocery store. If you are from the US and aren’t familiar with it, that is probably because it is not grown in the US. Jackfruit is native to India, and grows in Thailand, Brazil, Australia and Africa. One fruit can weight over 100 pounds – they are huge! It is rich in vitamin C, B vitamins and antioxidants. You can usually only find it canned, frozen, or sometimes in the fridge section near the tofu, but never fresh in the US. Jackfruit has been gaining popularity with vegetarians and vegans because it has texture similar to meat…

    No-Bake Chocolate Chip Energy Balls

I try to always have a stash of these no-bake chocolate chip peanut butter energy bites in my refrigerator, because they are a great “pick-me-up” when my energy levels get low. My toddler loves them as a snack, too! You can choose any nut butter you like to replace the peanut butter. These little bites are packed with energy-boosting ingredients, like oats, honey, chocolate and peanut butter. I add flax seeds and hemp seeds for extra healthy fats and protein. They are a great snack before your workout since they aren’t too filling, but give you a nice energy boost! My favorite thing about these no-bake peanut butter balls is…
