Tomato, Avocado, Walnut Salad

Do you like your salads sweet, creamy, or savory? I like my salads sweet! This is my go-to salad whenever I am feeling like a light meal, or adding a healthy side salad to my main dish. My favorite salad is mixed greens, which could be baby kale, spinach, arugula… Then, for the toppings I add fresh cherry tomatoes, chopped avocado, cranberries and walnuts. A handful of California walnuts is a versatile snack and can satisfy any taste preference, from savory to sweet.โ Regardless of your flavor preference, walnuts are the only nut to provide an excellent source of the plant-based omega-3, ALA (2.5g/oz). I add walnuts to my salads for the excellent healthy fat benefit they add.
Usually I like to make a honey-based dressing, but I also love balsamic glaze. You can make your own, or buy it at the store to have on hand in your pantry. I use it on a variety of dishes (caprese salad anyone?). The sweet notes of the balsamic glaze replace a traditional dressing on this salad, and it is even sweeter than a balsamic vinaigrette dressing.

Tomato, Avocado, Walnut Salad
Ingredients
- 4 cups mixed greens, washed
- 1 avocado, pitted, peeled and chopped
- 2 tbsp cranberries
- 1 cup walnuts
- 1 cup cherry tomatoes, halved
- 1/4 cup balsamic glaze
Instructions
- Toss the greens with the remaining ingredients in a bowl.
- Serve and drizzle balsamic glaze on top.
