Beet, Apple, Walnut Salad
I am the only person in my family who actually enjoys eating beets. I think they are delicious in salads or just by themselves. Since they have health benefits like antioxidants and anti-inflammatory compounds, I try to sneak them in and make my family eat them too. They are also a great source of fiber.
This beet, apple and walnut salad is one recipe they will eat! The dressing is a little sweet from the honey inside of it. If you let the salad chill overnight, it tastes even better the next day when the flavors marinate together. To make things easier, you can buy already cooked beets at the grocery store in the produce section or canned beets. If you have the time, cooking fresh beets gives the best flavor! While preparing this salad, watch out for red-stained hands!
Today was a hard “mom day.” I was already exhausted from the lack of sleep the night before, and it seemed like I was constantly being pulled in different directions all day. I did not have one second of “me time,” which I am sure you mommas out there are used to. At the end of the day, I felt really exhausted. On days like today, it helps to think about the blessings I have and the accomplishments, however small, I made during the day. As petty as it may seem, just being able to take the dog and the girls out on a 30 minute walk was a huge accomplishment! Well, tomorrow is another day ๐
Beet, Apple and Walnut Salad
Ingredients
- 1 apple, cored and diced
- 3 red beets, cooked and chopped
- 1/4 cup chopped walnuts
Dressing
- 3 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 tsp mustard
- 1 tbsp honey
- Pinch salt and pepper
Instructions
- Add the dressing ingredients to a bowl and mix well.
- Add the apples, beets and walnuts and toss well.
- For best results, chill overnight before serving.
