The other day I made this delicious triple nut butter from scratch, and ever since I have been craving chocolate nut butter balls! This confection is the perfect mid-week pick-me-up. Although dangerous, I enjoy having a bowl of them in my refrigerator to grab when I need to indulge! I stopped buying store-bought peanut butter cups at the store a long time ago, and started making my own version at home since it is so easy and there aren’t any yucky preservatives. Triple Nut Butter
I never buy nut butters at the store anymore, because I love watching raw nuts go into my Thermomix® and come out a creamy spread that I can use on breads, in my oatmeal or in various recipes. It takes less than 5 minutes to make a fresh jar, and lasts in the refrigerator a month. My favorite nuts to use include cashews, almonds and walnuts. Garlic Ginger Tofu Stir Fry
Some days I feel like cooking something simple and healthy with a lot of veggies. This garlic ginger tofu stir fry is the perfect quick, easy, healthy weeknight meal. While I prepared the garlic ginger sauce in my Thermomix®, I sautéd the vegetables in my skillet and cooked some brown rice in another pot. Straciatella Nice Cream
Did you know that straciatella is different from chocolate chip? There is sort of an art to making straciatella ice cream (or in this case, nice cream using bananas!). Instead of adding chocolate pieces to it, you slowly drizzle melted chocolate that gets frozen in pieces or swirls inside of the turning ice cream. It is super delicious! All you need to make straciatella nice cream is: frozen bananas and chocolate chips. I am so excited to share this rainbow wrap recipe with you today, because it is one of my favorite lunch recipes and it is really fast and easy to make! Bonus points for being vegan and portable.
