Peach Tomato Bocconcini Salad
This super simple salad reminds me of summer. When peaches are not in season, I sometimes use peaches in a jar. All you need for this easy salad is peaches, cherry tomatoes, bocconcini (little mozzarella cheese balls) and balsamic glaze. I always have store-bought balsamic glaze in my pantry, because I use it often, but you can also whip some up at home in less than 20 minutes using balsamic vinegar and honey or brown sugar. A drizzle of balsamic glaze makes everything sweeter and prettier.
My 4 year old loves this peach tomato mozzarella salad, and I often make it for her and I as a quick healthy snack. It only takes 10 minutes to prepare! She doesn’t like the balsamic glaze, so I leave a part of the salad free for her.
I finally reached 100 cycling rides on my Peloton! It took a while to get back into a workout routine after having our 2nd baby 3 months ago, but I am happy to finally be back into spinning regularly again. What is your favorite way to workout?
Peach Tomato Bocconcini Salad
Ingredients
- 1 peach, peeled and sliced
- 1 cup cherry tomatoes, halved
- 1 cup bocconcini balls, halved
- 2 tbsp balsamic glaze
Instructions
- Arrange the peach slices, tomato slices and bocconcini on a salad plate.
- Drizzle the balsamic glaze over the top.
- Serve chilled.
