On the weekends I like to treat myself and my family to a special breakfast. I try to think of something new every weekend, but also have a lot of delicious recipes in rotation. This chocolate oatmeal recipe is a family favorite, and goes great with fresh berries. The berries add a cool, refreshing taste, especially in the summertime! Mushroom and Leek Quiche
Quiche took me a while to perfect. I learned the hard way that the ideal ratio of eggs to milk is 2:1 (2 eggs for every cup of milk). I have made many runny and dry quiches alike, but after so many different tries I finally have a go-to quiche recipe that never fails me! You can use any vegetables you like instead of the mushrooms and leek, but I love the combination of these veggies with the gruyere cheese. A hint of nutmeg makes all the difference. In the past, I enjoyed cooking complicated breakfasts. It couldn’t just be plain old oatmeal or cereal, but an egg frittata with a side of whole grain pancakes and fruit. These days, it seems like the mornings are much easier when starting with a simpler breakfast. Spinach Goat Cheese Egg Muffins
Whenever I make these egg cups, they go very quick! They are so delicious. You only need a few ingredients and a muffin pan to make them. You don’t need paper liners, because you can just grease the muffin pan itself with butter, olive oil or cooking spray. These spinach and goat cheese egg muffins are great for breakfast, brunch or having some in the refrigerator for a quick snack. This breakfast recipe is even easy for my toddler to make. Mom’s Power Muesli
I can eat this chocolate pecan muesli every day and never get tired of it! It gives me so much energy that lasts, and the power I need for a good start on my day. For my homemade muesli, I use organic rolled oats, ground flax seeds, dark chocolate chips, pecans, and sometimes I add cranberries or raisins, chocolate corn puffs or rice cereal, and cacao nibs.
