    Vegan Rainbow Wrap

I am so excited to share this rainbow wrap recipe with you today, because it is one of my favorite lunch recipes and it is really fast and easy to make! Bonus points for being vegan and portable. Wraps are easy to pack as a lunch or take on-the-go. Inside of this healthy vegan rainbow wrap is roasted red pepper hummus, quinoa, shredded carrots, shredded cabbage, avocado, and spinach. I am sure there are many other ingredients you could add to it. Here is a super helpful tip: prep all of the ingredients you can beforehand, so when you are making your wrap it is grab-and-go. Whole Wheat Noodle Stir Fry

Sometimes when I open my fridge and pull out leftovers, magic happens. I love it when I throw some stuff together and it creates something delicious. That is how this whole wheat noodle and vegetable stir fry happened. I made whole wheat spaghetti the night before, and made too many noodles so in the fridge they went. I also had mushrooms and broccoli going bad, so those had to go. With some carrot, green onion, walnuts, and sesame oil, this yummy whole wheat noodle stir fry came together perfectly! I like to cook the vegetables until done by still crisp so the stir fry is more on the crunchy side.…

    Roasted Vegetable Flower Tart

The tart is a labor of love, but the end result is very satisfying! The creme fraiche is a delicious base, and squash and carrot peels are wrapped around each other to form a beautiful flower. This last time, I attempted to add some eggplant for color purposes, but I actually do not recommend adding it because it seemed to give the tart a tough texture and did not cook as softly as the other vegetables, even after 45 minutes in the oven. The purple color is beautiful, but not worth ruining the tart! Stick with easier vegetables to cook, like squash and carrots. Arranging the peels takes some time,…

Kale, Red Cabbage and Carrot Salad

We all know that kale is an incredibly healthy green, but not all of us like the taste of it. It took me a while to warm up to kale. Now I like it sautรฉed or fresh as a salad. Apparently massaging kale lessens its bitter taste, but I have never tried it myself. Instead, I coat it with a honey-sweetened salad dressing and add sweet ingredients to my kale salads, like dried cranberries. In this kale salad recipe, I added honey roasted pistachios, which you can buy at the store or make them yourself with regular shelled pistachios. These help balance the bitter flavor of the chopped kale. The…

    Roasted Cumin Carrots and Fennel

The first time I had this roasted carrot and fennel side dish was when my husband cooked it for me when we were on vacation. The funny thing is I don’t even remember where we were exactly, but I remember him cooking this dish because it was SO GOOD. I have never had roasted carrots and fennel before that day, and couldn’t believe the incredible flavors I had been missing out on. The key to making this side dish a success, I think, is a lot of olive oil and cumin. Don’t be shy! As you probably know, carrots are considered a super food for the eyes. They are packed…
