    Chocolate Nut Butter Balls

The other day I made this delicious triple nut butter from scratch, and ever since I have been craving chocolate nut butter balls! This confection is the perfect mid-week pick-me-up. Although dangerous, I enjoy having a bowl of them in my refrigerator to grab when I need to indulge! I stopped buying store-bought peanut butter cups at the store a long time ago, and started making my own version at home since it is so easy and there aren’t any yucky preservatives. Instead of making cups, I just dip frozen rolled up nut butter in chocolate to keep things simple. I use my homemade triple nut butter which has almonds,…

    Straciatella Nice Cream

Did you know that straciatella is different from chocolate chip? There is sort of an art to making straciatella ice cream (or in this case, nice cream using bananas!). Instead of adding chocolate pieces to it, you slowly drizzle melted chocolate that gets frozen in pieces or swirls inside of the turning ice cream. It is super delicious! All you need to make straciatella nice cream is: frozen bananas and chocolate chips. I use my Thermomix® TM6 to make it, because the motor is so powerful and my nice creams come out creamy without being melted and drippy every time! Serve your nice cream right away for best results. Vegan Chocolate Coconut Cream Tart

I feel really good about this tart because it is MOSTLY healthy! The gluten-free crust is made of almonds, oats, dates, maple syrup, almond butter and coconut oil. The ingredients are so simple and heathy for you! The filling is made with chocolate chips melted with coconut cream. I have been having fun with my new tart pan making different fillings, and this is one of my favorites so far. The melting point of chocolate is 90 degrees F, and you do not want to go much higher or you can burn it and it will taste awful. Also, do not let any water get into your mixing bowl because it…

    Chocolate Oatmeal

On the weekends I like to treat myself and my family to a special breakfast. I try to think of something new every weekend, but also have a lot of delicious recipes in rotation. This chocolate oatmeal recipe is a family favorite, and goes great with fresh berries. The berries add a cool, refreshing taste, especially in the summertime! Oatmeal is really easy to cook in the Thermomix®, and I love that I can make different varieties by adding different ingredients. One time I made an apple maple pecan oatmeal, another I made peaches and cream, and one of my other favorites is blueberry cinnamon. The oatmeal possibilities are endless!…

    No Bake Chocolate Walnut Bars

Disclosure: I received free samples of California Walnuts mentioned in this post. By posting this recipe I am entering a recipe contest sponsored by California Walnuts and am eligible to win prizes associated with the contest. I was not compensated for my time. Lately, ingredients have been scarce at the grocery stores for baking. I stocked up on a few staples, like nuts, cacao powder, oats, maple syrup and coconut oil, so these days it is easy for me to make this simple no bake chocolate walnut bar dessert with ingredients right in my pantry! No-bake desserts are the best, because they are almost always quicker and easier to prepare.…
