Some days, all I need is a simple pasta dish for lunch. Gemelli is one of my favorite types of pasta, and find it goes great with pesto sauce. I love how the sauce gets stuck inside the little twists! It is delicious tossed together with a fresh, homemade pesto sauce (although you can use store-bought to make things easier), and cherry tomatoes and quartered artichoke hearts. Whole Wheat Noodle Stir Fry
Sometimes when I open my fridge and pull out leftovers, magic happens. I love it when I throw some stuff together and it creates something delicious. That is how this whole wheat noodle and vegetable stir fry happened. I made whole wheat spaghetti the night before, and made too many noodles so in the fridge they went. I also had mushrooms and broccoli going bad, so those had to go. With some carrot, green onion, walnuts, and sesame oil, this yummy whole wheat noodle stir fry came together perfectly! Lemon Asparagus Orzo
Don’t you love that beautiful yellow color? I will tell you the secret: turmeric! Turmeric is closely related to ginger (it looks very similar on the outside), and the powder has a gorgeous, vivid yellow color. Turmeric is used commonly in Indian cooking, and is known for many health benefits (although some studies show mixed results). Health benefits include antidepressant effects, steady blood sugar levels in diabetes, anti-inflammatory effects and it even contains a compound called curcumin that may help fight viral infections.
