    Triple Nut Butter

I never buy nut butters at the store anymore, because I love watching raw nuts go into my Thermomix® and come out a creamy spread that I can use on breads, in my oatmeal or in various recipes. It takes less than 5 minutes to make a fresh jar, and lasts in the refrigerator a month. My favorite nuts to use include cashews, almonds and walnuts. I add a pinch of salt too (it is nice to control the sodium content). What is your favorite nut butter? Garlic Ginger Tofu Stir Fry

Some days I feel like cooking something simple and healthy with a lot of veggies. This garlic ginger tofu stir fry is the perfect quick, easy, healthy weeknight meal. While I prepared the garlic ginger sauce in my Thermomix®, I sautéd the vegetables in my skillet and cooked some brown rice in another pot. To make this dish even faster, you can precook the veggies and rice ahead of time, during meal prep day, for example. When I decided to change my diet to a more plant-based diet, I started eating tofu at least once a week for my protein source. I am still finding new ways to enjoy it…

I am sure there are many other ingredients you could add to it. Here is a super helpful tip: prep all of the ingredients you can beforehand, so when you are making your wrap it is grab-and-go. For example, I cook…

    Cauliflower Fried Rice

Forget take-out and make this super simple, delicious and healthy cauliflower fried rice in under 20 minutes! Keep it vegan or add scrambled eggs or chicken for protein. Cauliflower alone is very plain and does not have a strong taste. In this recipe, it is first “riced” and then fried in oil and flavored with garlic, liquid aminos (a substitute for soy sauce) and sesame oil. To rice the cauliflower, I use my Thermomix®. You can literally throw a head of cauliflower into it and it will rice it in 4 seconds flat. Impressive! If you do not own one, you can use a food processor. There is a debate…

    Basic Energy Bars

I am so excited to share this energy bar recipe with you today! They are my favorite snack to take along on a hike, or just for an afternoon pick-me-up when my energy levels start to get low. They boost my energy levels and give me lasting energy with healthy ingredients. In this basic energy bar recipe, I use dates, almonds, oats, peanut butter, and maple syrup. Of course, there are many variations beyond this basic recipe. You could add many different mix-ins, like nuts, seeds, dried fruit, coconut, or chocolate. The possibilities seem endless! To make these bars, I use my Thermomix®, which makes this recipe much easier. I…
