Roasted Cauliflower Soup
I used to make cauliflower soup without roasting the cauliflower in the oven first, and once you have done both ways you will notice the difference the roasting makes in the flavor. Roasted cauliflower soup is so much more flavorful than just boiling the cauliflower raw. I like to add a hint of nutmeg to this soup, since it goes really well with the roasted cauliflower flavor. Did you know that cauliflower is high in vitamin C? It also has a good amount of fiber, making this soup a healthy choice! For a fancy presentation, save a few of your best looking roasted cauliflower florets to serve on top of…

Pea and Pesto Gnocchi
One of my weeknight go-to recipes in frequent rotation is this pea and pesto gnocchi dish. Sometimes if we have had a big meal earlier in the day, I serve it as a main, and sometimes if we are very hungry, I serve it as a side to something else. My favorite kind of gnocchi is potato gnocchi. It is very filling! I have never attempted to make it from scratch, but one of these days I will try it. To make this dish super quick and easy, take a package of store-bought gnocchi and cook it according the the package directions. Then, just toss with some cooked peas and…

Vegan Sweet Potato Chickpea “Butter Chicken”
I am so excited to share this vegan butter chicken recipe with you today. The name is a little misleading, because there is actually no chicken in this recipe – it is a vegan version of Indian butter chicken. I just couldn’t find a better way to describe it, because it isn’t really a curry, but more like a butter chicken sauce. Butter chicken is made with a delicious spiced tomato sauce. Instead of meat, the main ingredients are sweet potatoes and chickpeas, which make this dish very filling. Chickpeas are a good source of plant-based protein, and both chickpeas and fiber contain a lot of fiber. Hang in there,…

Dukkah Avocado Toast
Some days you just need something easy for lunch. The other week I shared my homemade dukkah recipe, and it tastes great on top of avocado toast! Another reason I love always having some on hand in my spice rack. I like to make these dukkah-topped avocado breads to go with a quick soup or salad for lunch, and I like the extra protein and flavors the nuts from the dukkah provide. You can purchase dukkah at some grocery stores, but it is very easy to make at home (see my recipe above). Avocados are a superfood I always have laying around the kitchen – they are packed with vitamins,…

Red Lentil Soup with Spinach
This red lentil soup is one of my favorite soup recipes! There are so many flavors going on in this soup, and it is really healthy. Lentils are high in protein, making them a great meat substitute in a plant based diet. They are also a good source of fiber, iron and calcium. Red lentils cook the fastest, which is one of the reasons I prefer using them in recipes. One other thing I love about lentils is that they keep you feeling full for a long time, and give you lasting energy. Flavors inside this comforting soup include garlic, cilantro, curry, and coriander. Carrots and tomatoes also give it…
